烤紅椒和鱈魚布丁 ---- Cod and roasted peppers pudding

Here's a bit of a more delicate tapa. Two basic ingredients combined to perfection: the salty cod with the sweeter flavour of roasted red peppers. A dish with a gentle, mousse-like texture. Can be eaten warm or cold, with bread, crackers or on its own. 

It's simple, it's healthy, it's delicious!


Recipe:

- 3 red peppers
- 1 cod fillet
- 3 eggs
- 2 cloves of garlic
- 1/2 cup of cream
- Salt and pepper
- Olive oil

1- Preheat the oven to 170 degrees. 
2- Spread some olive oil and salt over the peppers and roast for about an hour. 
3- Take them out and place them on a big bowl. Cover with tin foil and let them cool down for a bout 30min.
4- Fry the cod fillet with a little olive oil on a frying pan, a couple of minutes on each side. Tear to flakes.
5- Gently remove the skin and seeds from the peppers.
6- Put the peppers, cream, eggs, garlic, salt and pepper in a hand-blender container and blend together.
7- Coat an oven container or baking mold with oil or butter and pour half of the pepper mixture in it. Add the cod flakes and cover with the remaining mixture.
8- Place the container on a bigger one filled with some water and bake in the preheated oven (170 degrees) for 45min.
9-Done!
